For use in the preparation of Tajines, or to enhance any lamb, salmon, chicken or vegetable dish.

Some ways to use Tajine Spice
- For a beautiful and easy tajine, sautee onion in olive oil, add a tablespoon of Tajine Spice and combine with any cut of meat along with your favourite vegetables and stock, and cook on a low heat for two hours. Garnish with herbs, toasted almonds and preserved lemon.
- For a vegetarian tajine, sauté carrots, parsnips, cauliflower, onions, potatoes, chickpeas, leeks and red capsicum in oil and stir through 2 T of Tajine Spice. Add dried fruit such as prunes, dates, figs or apricots. Pour over 200mls water and 200mls vegetable stock and cook at 180°C for 40 minutes. Turn the heat down to 150°C and cook for a further 40 mins. Sprinkle with coriander and/or mint and serve with couscous.
